Was going to cook smashburgs yesterday but wife had bought Pork and Apple patties.

Attempting to cook said patties resulted is a mushy pile of grey stodge.

I politely told her that only pork and apple sausages were permitted in our house from now on, and made a fried chicken sandwich instead.

Got takeaway from local "hipster" burger joint. Chips were kebab shop chips with jalapenos, chiliflakes and chillisos. Nice and spicy but not worth the money.

It's all purpose flour, but would probably be a lighter bun if I had used bread flour? I'm mostly a beginner baker as well.


Looks good! I want to try the Beyond or Impossible burger at home at some point.

Bread flour is generally chewier due to more gluten but if you get high grade stuff it tastes so much better.

Lightness; don't quote me but I think that comes from how you proof, fold and form the dough - get lots of air bubbles trapped into the dough.
I'm still working on technique as my results vary every time due to inconsistency.

These next gen vegan burgers are well worth a try as they look and taste quite similar to real burgs. Still a bit off on the real beefy texture but really good in their own right.

Had the shape of a roll, texture of ciabatta with a pizza base crust. It held the slop up well and had a big chew.

However, Marslev Grill about 20 minutes drive (30 minutes by bus, I think?) is still open according to Google Maps and their Facebook page, and it's probably the best bøfsandwich to be had on Fyn (the best ones are in Jylland).

I'm not gonna say it's worth coming to Denmark for, but it's not not worth it.
