One was the "more traditional" one where you got served from trolleys. The other made your meal to order. Both had lines to get in. However in line for the trolley restaurant there were white tourists whereas in line for the other were actual Chinese people. So we chose the latter and I had some of the best shredded turnip I will probably ever have. That said I am usually very much into authenticity because it's an experience and you get exposed to new ingredients. If given the choice between a delicious burrito bar run by white hipsters and an authentic Mexican restaurant I'd probably chose the latter. e: Exception is pho soup where I'm at. The local Vietnamese population came mostly from the north of Vietnam and their version of pho is bland. Hipsters making the southern version are preferable. I don't know about Beijing, but when I was living in Shanghai there as a restaurant which opened and closed in 2016 called "Fortune Cookie" which offered westernized Chinese food. PF Chang opened and closed a restaurant in Shanghai in 2018, I never went to either of those. I've since moved back home from Shanghai and I only visited one Western style Chinese resturant, it was a huge disappointment.

The US has some really good food and honestly some great regional variations and rich food subcultures. the only real provlem foodwise, is the existence of Pennsylvania and the dominance of big chains.
