I think the main issue is that most of these are in the middle of nowhere so you'd spend 90% of the trip driving and hoping the conditions were good for photos the moment you were there

This is definitely the case. I went on a Spomenik roadtrip last fall and it'd typically be a 3-5 hour drive between them. It also rained just about the entire time. My guide mentioned it's not uncommon for photographers to camp out next to sites for the right moment (I'm not that serious and just wanted to see them in person).
