We were already getting close to the maximum burger height allowable aka how much I'm able to unhinge my jaw like an eldritch horrorshow, also they are the longer thin Aldi ones, not the big flat birds eye items. I'm actually impressed how well it held together regardless.

Lightness; don't quote me but I think that comes from how you proof, fold and form the dough - get lots of air bubbles trapped into the dough. I'm still working on technique as my results vary every time due to inconsistency. These next gen vegan burgers are well worth a try as they look and taste quite similar to real burgs. Still a bit off on the real beefy texture but really good in their own right.

I had the urge to smash some burgs. 1/4lb 80/20 Beef Ball. Smashed on a 500+ baking steel to 1/4" thick. Salt and peppered, flipped, S&P'd again. Added some low moisture mozz. Then topped with bacon on a toasted bun.

I was making a big batch of sausage today but it won't be ready until tomorrow. Need some dinner for tonight! Since the grinder was already going to be out and grinding chuck anyway, might as well throw in some short rib too to grind for burgers! Ended up with a 50/50 mix. Brioche bun, blue cheese, bacon, butter lettuce and chipotle mayo. Didn't get many pictures since I was feeding other folks too. And my cat Earl helping by reading out Ruhlman's master sausage ratios.

The mix was about 50/50 short rib/chuck. Most fancy burgers places add some brisket in there, but I didn't feel like thawing the 12lb one I have in the freezer that's slated for pastrami. I also didn't feel like asking one of the butchers to slice me off a whopping 8oz of brisket. The mix was still real, real good. Cooked them on my new Saber 4 burner. Thing is actually pretty massive, built like a tank, and thanks to the infrared system, gives legit smokey, grilled flavor.

Strangely, Earl has no interest in any type of human food. Not meat, cream, cheese, anything. Only cares about cat food. So he was just helping out of the goodness of his heart.
