gonna head to the store in a couple hours and stock up. probably just get like ~2 weeks of food that I would normally buy and maybe some extra TP / cleaning supplies. am I gonna starve to death if I don’t buy food stores for the apocalypse? don’t really know what I would even buy. btw I’m in seattle and one of my coworkers is currently deathly ill and a few of them live right next to the school where the kid tested positive so I probably already have it lol

Add bell pepper, tomato can, diced tomato (if using), mushrooms (if using). Mix, cook for 1-2 minutes. Cook for 15-20 minutes, or until the sauce reduces to your liking and the quinoa is fully cooked and absorbs the liquid. As every chili, tastes better after a day in the fridge, reheated. Serve with a lime wedge for sprinkling; top with some combination of green onions, coriander, avocado and/or parsley. If not strict vegan, top with sour cream.
