gonna head to the store in a couple hours and stock up. probably just get like ~2 weeks of food that I would normally buy and maybe some extra TP / cleaning supplies. am I gonna starve to death if I don’t buy food stores for the apocalypse? don’t really know what I would even buy. btw I’m in seattle and one of my coworkers is currently deathly ill and a few of them live right next to the school where the kid tested positive so I probably already have it lol

Put quinoa on a dry non-stick pan on low-medium heat. Toast for a few minutes, until they darken slightly (gives them nutty flavor). Rinse under cold water, reserve in a bowl with beans and corn. 2. Heat oil on medium heat. Add onions, diced chili, and salt. Sweat for a few minutes, until translucent. Add garlic and all the spices, toast for 1-2 minutes. 3. Add bell pepper, tomato can, diced tomato (if using), mushrooms (if using). Mix, cook for 1-2 minutes. Add sweetener (the sweetener counteracts the sour 'can' flavor canned tomatoes get due to being blasted under high heat, allowing you to save a lot of cooking time) and worcestershire sauce. Let mix for another 2 minutes. 4. Add quinoa/beans/corn and the vegetable broth. If you cooked your beans, you can use some of the cooking liquid as a bean broth too. Mix. Cover. Cook for 15-20 minutes, or until the sauce reduces to your liking and the quinoa is fully cooked and absorbs the liquid. As every chili, tastes better after a day in the fridge, reheated. Serve with a lime wedge for sprinkling; top with some combination of green onions, coriander, avocado and/or parsley. If not strict vegan, top with sour cream. I did a drive up order to Target this morning for the last of my doomsday supplies. I then dipped into the store quickly and it was dead. Shelves full and hand sanitizer as far as the eye can see. Minnesota must not be in panic mode yet.
